LTMS students and staff enjoy enchiladas made from scratch

Students and staff at Lexington Trails Middle School had a special treat on Friday: made from scratch enchiladas. The school's lunchroom staff, many of whom are Hispanic in their own heritage, made the enchiladas to celebrate Hispanic Heritage Month. Serving the fresh meal was a step forward for the district's nutrition program, which is trying to add variety to students' food offerings and to use less convenience foods.
